Executive Chef, Jason Miller, has joined the The Maslow’s Lacuna Bistro, bringing with him a sustainable concept to food sourcing and a new menu that speaks to current food trends launching on March 10.
At a chef tasting event, Miller introduced some of his signature dishes, such as oysters with mint and onion salsa on a bed of crushed ice, Norwegian salmon sashimi with habanero and sesame seeds, and prawn and baby spinach salad with miso, and truffle dressing, rubbed in parmesan –which he calls ‘the most elusive salad in the world’ with its simple components that surprise you with their rich flavours.
Motivated by his passion for seasonality and freshness, he removed a few dishes from the menu and replaced them with new options featuring locally sourced premium-grade meats, sustainable fish, and seasonal vegetables.
Such dishes showcased at the tasting include the sustainable line-caught tempura hake, prepared with jalapeño dressing, vegetables and spicy cream sauce, as well as a the premium quality Woodview Wagyu beef free-range sirloin.
“No eatery can stay at the pinnacle of choices by becoming stagnant. The menu must evolve with changing trends and tastes. Johannesburg’s fast-paced lifestyle and dynamic social culture call for simple but exciting dishes with unexpected twists, and loads of personality,” said Miller.
He has also launched a number of new desserts, one of the favourites being a dulce crème brúlée with an almond twirl, passion fruit and mango curds, caramelised pineapple with a cocoa crumble and plain vanilla ice cream.
Lunch and dinner are enjoyed overlooking the oasis garden while the bustle of Sandton continues unobtrusively outside.
The business-centric Maslow hotel is situated in the heart of Sandton’s business district, offering corporate facilities, complimentary Internet access throughout the hotel, 13 meeting rooms, conference centre with a multi divisible ballroom and auditorium, a techno gym and the Wayfarer Lounge.
